Poached Eggs on Toast w/ Chevre.
This is my favorite brunch.

2 eggs
2 pc. toast (I recommend thin rye)
2 Tbs. soft goat cheese (chevre)
S&P
optional: fresh chopped herbs

Fill a med. sauce pan with water and set to boil. When it is boiling hard, reduce heat to med. and crack eggs one at a time into the water. 

Let the eggs set up before adding another. Gently move them around the pan with a slotted spoon. Gently!! 

While the eggs poach, get your bread in the toaster. When the toast is done, spread 1 Tbs. chevre on each slice of toast. (You can add avocado, tomato, fresh onion or all 3 here.) 

Check you eggs. They should be ready after 3 or 4 minutes.You want the egg to be firm white, soft in the yolk. Use your slotted spoon to drain and remove the eggs and place atop your toast. Add S&P to taste. Top w/ herbs if you like that sort of thing.

Serve with some mixed greens and a lite dressing for a great brunch!
Yam Fries
a great substitute for the average potato dish. 

heat oven to 400
2 med. garnet yams
1 Tbs. olive oil
2 Tbs. liquid aminos
S&P
cayenne pepper

Cut the ends off both yams. Cut in half then cut into large batons. Make them look like fries. 

Combine the yams and all the other ingredients in a large bowl and toss to coat the yams evenly.

Spread them out on a cookie sheet and bake for 30 minutes.
Delicious with....

Killer Garlic Dip
make sure everyone has some!

blend....
5 cloves garlic
1/4 c. tahini
1 Tbs. olive oil
1 Tbs. liquid aminos
2 Tbs. water (add more to thin)
until creamy.

then mix in a bowl 
1 Tbs. mayonnaise 
1 Tbs. ketchup. 

start with 1 Tsp. of the garlic mixture and  add 1 more at a time to the bowl of mayo. Keep adding and tasting until it is killer!
